Hi friends! Since I’ve returned from Summerfest I have been testing new recipes something fierce (actually, was doing the same before I left too). In fact, I am testing new things so often that I rarely get time to sit and format the recipes and share them with you.
And, I want to post with photos… and it takes me FOREVER to get a proper food photo with our schedules with the girls and simply keeping up with being a mom.
So, here’s the thing. I’m buying some time before I post again – at least a few days. Time to get some recipes formatted, and start this plant-powered kids’ series! I figure a cookbook giveaway does the trick… right? π
I am giving away TWO copies of LTEV… and TWO copies of ed&bv! That’s four winners, so your chances are good here to snag a new cookbook! (and if you already have one or the other and want to choose one of my other cookbooks, can do!)

I love all beans except black eyed peas – my favourite way to eat them is in a burrito – I can eat them everyday – and come close to that. I keep a can of beans in my car as part of my “emergency” food kit for when I find myself somewhere that for whatever reason cant (maybe won’t ) do vegan.

In terms of healthful beans (but who’s to say the aforementioned aren’t healthful in small doses?), I love love love lima beans and navy beans. Put them in a stew and I’m delighted.

As for beans, I love them all, although I do have a special sentimental attachment to the chickpea. My parents used to bring me to lebanese restaurants all the time when I was little and I always loved hummus…and then my family went to live in North Africa for a while, so chickpeas make me smile because they remind me of my childhood and because they’re so versatile and delicious!

Open a can, heat, add some cumin, fresh tomatoes, parsley, and a bit of lemon juice and serve with pita bread and some veggies. Yum! One of my favorite beans is the scarlet runner bean – it’s originally from South America but the place where it is used on a daily basis is South Styria in Austria. It is a big beautiful bean, and they serve as part of salads and by itself with some shallots but always with roasted pumpkin seed oil. It’s outrageously good and we are now growing them in our garden. It’s worth it alone for the red flowers that attract bees and humming birds.

Recently, I was at a fancy Italian restaurant with a group of friends. Evidently, I was the only vegan in the crowd and there was not even one vegan item on the menu. Even the salads and soups were filled with cheese and meat stock. The waiter checked with the chef and they created a most delightful main course with cannellini as the base. Tonight, I was back in that little Italian restaurant (in my mind) where they treated me to a new bean.

One bean huh? I would have to say garbanzo beans because they are so versatile. I can eat them cold on a salad, put them in soups and stews, blend them into hummus, and then dry them in the dehydrator with seasonings for a crunchy snack. I dry roast chickpeas for an easy healthy snack…plain or spiced or mixed with other nutty seedy things. I grew up in an Italian family and dried chickpeas (we called them ceci) were always on a table in a big bowl, along with a big bowl of roasted salted pumpkin seeds, for an anytime snack. I love lentils! My favorite way to use them is to make a lentil salad. I mix lentils, cucumbers, tomato, mint leaves, dried fruit. Olive oil and red wine vinegar as the dressing. π

My favourite beans are CHICKPEAS. Because they are magical – they make falafels, hummus, curry, besan flour, tacos, and burgers; and are delish baked, fried, mashed, pureed, cold in a salad… OMG. And thanks to a number of American/Canadian vegan cooks on the interwebs I have discovered the power of the black bean which is steadily gaining more and more use in my house! I would love to win a copy of E,D & BV! As I am currently only eating food I cook out of LTEV it would be good to have another cookbook of yours to start working my way through and expand my healthy vegan recipe repertoire π

I have both of the cookbook options, but just had to post anyway, and say hands down Dark Red Kidney beans are my all time favorite! They are so versatile, and great in everything from chili to burgers… casseroles and even on salads! I love them!

I’m with so many others…hard to choose just one bean! Black beans are a daily go-to…either in other recipes or topping a salad. Pintos are my favorite to eat on their own…well with a bit of chow-chow, onions, tomatoes and cornbread! And kidney beans are a must in chili! And my favorite casserole has French lentils….Love ’em all!

I’d love to win a copy of LTEV even thought i already have it I have someone who always goes the extra mile for us and makes us vegan goodies every time we go to their house to eat (which is at least once a week!) even though they are omnivores so I’d love to give her a copy!
I love all beans so this is a tough one but i’m gonna say cannellini beans. I always puree a can with some onion and garlic powder and the juice from a fresh lemon and mix it with mashed potatoes – also makes a great stuffing for twice baked potatoes, just add some chopped green onions and some of the daiya mozza shreds. Awesome!

Hi Sarah! I’m a thyroid cancer survivor and I wanted to just take a moment to say hey! I know – you’re probably like what???? I think the hardest part of dealing with the thyroid stuff (for me) was the iodine free diet. I wasn’t even vegan at the time, but I was vegetarian and my iodine free diet consisted of plain rice crackers, jello, and pb & j. It was so hard (over a decade ago) that I caved and had to eat meat. Glad Dreena’s books are there to help you out! I’m due for another scan in the near future, so I’ll be sure to stock up before then! Best of luck!!!! And hugs coming your way!

Ceci! I adore ceci (garbanzo) beans in part because of my Italian heritage and for their versatility. When you cook them from dry, the broth looks just like chicken stock and is delicious when salted.
